A.Origin of Modern Cookery
WE have quantity kitchen since very old times since armies have to be fed.The modern food system of fine dining is a very recent phenomenon.Earlier if you were to stay in a modern inn or later a hotel the food was bought from the authentic food making shops and served .So the guests were left hardly with any choice.Much work has been done over hundred of years by countless chefs to bring the food history to the present form.The things were not done arbitrarily by the chefs however,it was based on an understanding that how the food reacts with heat in different ways and when combined in various proportions .
In France Food Production was controlled by the Guilds.
